Ingredients
- 4 x 6oz salmon fillet skin on
- 3 tbsp honey
- 2 tbsp olive oil or avocado oil
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/3 cup sliced almonds
Directions
- Preheat your oven to broil and place a rack on the top position.
- In a small bowl or measuring cup, combine the honey, olive oil or avocado oil, lemon juice, salt and pepper; mix vigorously with a fork or flat whisk until well combined.
- Place the fish on the roasting pan ( Place the fish fillets skin side down if it has skin) and brush them with about half the glaze. Place the pan directly under the broiler for 6 minutes, until the fish is cooked to your liking and the top is nicely golden and slightly caramelized.
- Remove the fish from the oven and brush the pieces with the remaining glaze and then sprinkle with the sliced almonds.
- Broil again for 2-3 minutes until nice and crispy
- Serve immediately on top of the nice salad as I did or vegetable of your choice
