- 1 lb. of 96/4 ground beef
- 1 cup oatmeal (old fashioned)
- 1 whole egg
- 1/2 cup of reduced sugar ketchup
- Handful of shredded carrots
- handful of shredded zucchini
- 1/2 of medium diced onion
- salt, pepper, thyme, basil, or other herbs you like
Directions:
Mix all the ingredients in a large bowl with hands just enough to combine. Shape into loaf and place it greased loaf pan. Drizzle a little ketchup on top.
Bake on 350 degrees for a hour. Let it sit for 5-10 minutes before slicing it.
