Lazy Stuffed Peppers
Ingredients:
- 1 package of lean ground beef
- 1 large (very large) sweet onion, diced
- 1 package of MINI sweet bell peppers, sliced
- 4-5 large carrots, grated
- 4-5 tbs. of vodka sauce or your favorite marina
- 2 cups cooked jasmine rice
- Fresh dill
- Garlic powder, salt, and pepper to taste
- Vegetable stock
Directions:
- In a large pot, deep pan, or Dutch oven (I used my Dutch oven) sauté your diced sweet onion in a little coconut oil
- If you have a rice cooker cook your rice and set aside
- Once onion is transparent add your sliced sweet bell peppers along with your grated carrots
- Sauté your onion, sweet bell peppers, and your grated carrots until fully cooked, I gradually added a little vegetable stock here and there every time the mixture looked a little dry to keep it nice & moist
- In a separate pan sauté your ground beef until cooked, once cooked add to mixture
- Stir in your cooked rice
- Add your 4-5 tbs. of vodka sauce or your favorite marina
- Season with garlic powder, salt, and pepper
- Garnish with fresh dill or fresh herb of your choice
* Also keep it low carb by replacing rice with riced cauliflower!
