18 Jul2018 Team 4 FIT 0Recipes Kale & Quinoa Chicken SaladIngredients: 1 large bag of pre-washed Kale (I personally love the Aldi’s brand/less stems) 1 large cucumber 1 package cherry tomatoes 3 bell peppers 1 box/package of red quinoa (cooked to your liking, I boiled mine and let cool) 1 avocado (Ivan used 40g of avocado for each of his meals to keep his calories a little higher) Fresh chopped dill (absolutely love fresh dill) Low calorie salad dressing (add day of) Grilled chicken (my meals get 4oz each, Ivan’s meals get 6oz.) . Directions: Grill package of chicken breasts, set aside & cut it Cook your quinoa & set aside Lay out your tuppawear containers and add a handful of Kale to each Chop cucumber, cherry tomatoes, bell peppers, fresh dill, (season to your liking) and add to tuppawear containers Add 2 tbs of cooked quinoa on top of vegetables to each container Depending on your meal plan add your cut grilled chicken breast to each container and VOILA! . .
